I suppose your only choice is not to switch on digital age.
There isn't a facility to have buildings or processes unlock over time, so whilst you can restrict dates for inventions and therefore products (eg. start your game in 1920 and have computers unlock in 1953), the game does not currently support the introduction of buildings over time. In other words, if you turn on digital age and make computers inventable tech, then everyone goes bankrupt at the beginning of the game and the internet has no users. Its technically possible to do but doesn't make for much in the way of fun gameplay (in fact I did it by accident and wondered why my world was so weird).
Digital age absolutely needs computers in order to function properly, regardless of how much you mod it.
