So am I getting it right, that adding all these extra products creates an enormous amount of extra demand?
Even when playing with max competitors at maxed out competitiveness/aggressiveness settings, the city map is quickly filled to the last land slot without being able to fulfill the demand for all products.

Yes, that is basically the case.
The reason being that new products all require workers to produce. Those workers that you hire contribute to demand for other products. So you are not only producing more factories for more products but also more factories for existing products as well. In the Real World there are so many products that it all adds up fast.
Perhaps you could try the experimental settings to lower consumer demand:

Problems are not only with the production of CPUs, but also with the production of CCD sensors. 60 units are produced in one module per cycle. The maximum possible placement is 3, per month from the megafabric!!! 5800 comes out. This is so funny. Please correct the production cycle. The mod itself is simply magnificent

For references: that ancient version of the game comes from pirated copy.
