Why I can't remove old hardware from my OS? Why I can't create OS with new name?

So I started my own operating system, for "generic hardware"
Later I created a custom hardware, think of something like "Macintosh".
Then I wanted to make an OS that was ONLY for that hardware.
But I can't. Even if I click the "new software" button, I can only create a version or something. I can't set a new name, can't disable the old generic hardware, and have to wait tech to be updated.
This is silly. Why I can't imitate Apple?
